Pork loin is certainly the best known and probably most consumed cut of pork. This is the part of the pig's back, which includes all the vertebrae and the initial part of the ribs, excluding the front part of the back (the neck).

Pork steaks represent one of the most common and requested cuts of pork in Italy. The steaks are the upper part of the pork ribs, located in the center of the loin, and correspond to a slice of the loin, the so-called arista.
